Proper Ice Cream on the menu at Buccan
Restaurant central to success of all-natural, scratch-made delicacy.
Savory dishes at Buccan — from squid orecchiette to spicy pork taquitos — aren’t necessarily proper in the buttoned-up sense, but how about the ice cream at Buccan?
It’s uber-creative, too, but definitely proper — as in Proper.
Buccan, 350 S. County Road, serves Proper Ice Cream, the made-fromscratch ice cream created by an area lawyer whose first ice cream shop recently opened in Delray Beach.
Buccan has been a champion of Proper Ice Cream since its culinary team taste-tested various flavors about a year ago, said Buccan executive chef and co-owner Clay Conley.
“We were blown away,” Conley said. “The rest is history, as they say.”
Proper Ice Cream owner Rick Felberbaum practiced law for many years before devoting his energies to his passion: creating ice cream made entirely from natural ingredients.
After progressing in his endeavor, Felberbaum introduced himself — and his ice creams — to Conley.
“He came (about a year ago) and worked with his ice cream machine at Buccan for about six months, making ice creams and developing flavors,” Conley said. “I couldn’t be happier for him now.”
Felberbaum, now poised to open a second ice cream shop, recently called Conley his “single most important supporter. I always knew that if Clay loved my ice cream, I could really do this.”
Proper flavors include the classics chocolate, vanilla and strawberry, but the ones that put the brand on the map include blueberry muffin, sweet cream and peach, butterscotch with brownies, and fresh ginger, to name a few.
Vegan flavors, which Buccan also champions, are available, too.
On a recent Wednesday night at Buccan, available Proper flavors included coffee, rocky road, peaches and cream, banana pound cake, peanut butter and jelly, and chocolate egg cream.
Proper Ice Cream also is served, among other area restaurants, at Buccan’s sister eateries Imoto, also at 350 S. County Road, and Grato, at 1901 S. Dixie Highway in West Palm Beach.
Proper’s flavors go well beyond classic chocolate, vanilla and strawberry, and include vegan flavors.
