Crispy avocado fries are perfect for after-school munching or even your game-day party spread.
Preheat oven to 425°F. Line a baking sheet with parchment paper. Halve and pit 2 medium avocados. Carefully remove avocado halves from their skin using a large spoon. Slice into ½-in. wedges. Place ¼ cup flour in a shallow bowl. Place 1 egg, lightly beaten, in another shallow bowl. Place 1 cup finely crushed tortilla chips in a third shallow bowl. Dip avocado wedges into the flour, then the egg, then the chips, turning to coat well with each. Arrange avocado wedges on prepared baking sheet, and bake for 10 to 12 minutes or until golden brown, turning once about halfway through. Serve with a dip made from ½ cup plain Greek yogurt and 2 Tbs. honey. Makes 6 servings.
