Crispy av­o­cado fries are per­fect for after-school munch­ing or even your game-day party spread.

Pre­heat oven to 425°F. Line a bak­ing sheet with parch­ment pa­per. Halve and pit 2 medium av­o­ca­dos. Care­fully re­move av­o­cado halves from their skin us­ing a large spoon. Slice into ½-in. wedges. Place ¼ cup flour in a shal­low bowl. Place 1 egg, lightly beaten, in an­other shal­low bowl. Place 1 cup finely crushed tor­tilla chips in a third shal­low bowl. Dip av­o­cado wedges into the flour, then the egg, then the chips, turn­ing to coat well with each. Ar­range av­o­cado wedges on pre­pared bak­ing sheet, and bake for 10 to 12 min­utes or un­til golden brown, turn­ing once about half­way through. Serve with a dip made from ½ cup plain Greek yogurt and 2 Tbs. honey. Makes 6 serv­ings.
