Critical violations: Chicken 114 degrees, steak 109 degrees; hot holding is 135 degrees or above. Must date mark ready-to-eat potentially hazardous foods held more than 24 hours.
Noncritical violations: Floors and walls in food prep areas and ware-washing area must be smooth and easily cleanable. Back door needs a door sweep. Em- ployee involved in food prep must wear a hair restraint.

Critical violations: No handwashing cleanser at front handwashing sink. No hand drying provisions at back handwashing sink.
Noncritical violations: Boxes on the floor in the cooler. Employee involved in food prep may not wear jewelry on hands or wrists except for a plain wedding band. No hot water at front handwashing sink.

Critical violations: Employee placed raw hamburger meat on the grill then handled hamburger buns, only using hand sanitizer in between. Must wash hands between raw and ready-toeat foods. No markings/ identification on items using time as a control.
