From the kitchen of Florence Poe from the cookbook, “The Poe Collection” 1 pkg. vanilla wafers, crushed 1 box powdered sugar, sifted 1 stick butter, melted 1 (6 oz.) can frozen orange juice, thawed 1 pkg. coconut Combine the vanilla wafers and powdered sugar together. Stir in the butter and orange juice. Mix well. Roll spoonfuls of the mixture into balls. Roll the balls in the coconut. Refrigerat­e until firm.

Easy Sundae Cake

From the kitchen of Florence Poe from the cookbook, “The Poe Collection” 1 pkg. chocolate cake mix 1 c. mini chocolate chips, divided 1 (11.75 oz.) jar hot fudge topping 1 (11.75 oz.) jar caramel topping 8 oz. whipped topping 2 Heath bars, coarsely chopped Prepare the cake mix as directed in a 9- by 13-inch pan, adding 3/4 c. of the mini chocolate chips to the batter. Immediatel­y after baking, poke holes in the top of the cake with a fork. Warm the fudge and caramel and pour over the top of the cake. Let cool. Cover with the Cool Whip and sprinkle the remaining chocolate chips and the candy bar pieces over the top.

Recipe Note: If you like hot fudge caramel sundaes, this really hits the spot!
