2 breakfast sandwiches worth getting out of bed for
You can’t beat a bowl of wholegrain cereal, yogurt or oatmeal for a quick and easy breakfast, especially if you top it off with a handful of fresh fruit. And it’s good for you, too, in that eating something healthy first thing in the a.m. jump-starts your metabolism for the day.
But every once in a while, aren’t you craving something warm and savory? For me, the urge to eat something a little more substantial for breakfast coincides with the arrival of fall.
The answer is easy enough: a simple, hearty breakfast sandwich.
First, there are just so many wonderful things you can slather between two slices of toast, stuff into a split biscuit or pile inside an English muffin. From eggs and cheese to breakfast meats to roasted tomatoes or a buttery slice of avocado, the combinations are endless.
Second, they’re portable and can be eaten with your hands. That’s a boon for those of us who can’t get it together until we’ve had our second or third cup of coffee, and end up eating behind the
wheel of a car. A breakfast sammie allows for a breakfast on the run.
Third, they’re satisfying. That means you won’t be snacking on junk throughout the day.
Here are two recipes to get you started — one that’s pretty easy, and one that will take a bit more time.
The first, from Eating Well magazine, pairs scrambled eggs and pesto with an English muffin, and takes just a couple of minutes to prepare. It gets extra oomph from roasted red peppers. Chrissy Teigen’s breakfast sandwich, from her new cookbook “Craving,” takes some planning, in that it starts with a homemade buttermilk-chive biscuit. Slow-scrambled eggs and Canadian bacon get piled inside for a sammie that will remind you of drive-thru, but is actually homemade.
Either sandwich should be a reason to pull yourself out of bed in the morning.
