ASIAN-STYLE CHILI CHICKEN “NACHOS”

2 Tbsp hoisin sauce

1 Tbsp fresh lime juice plus wedges, for serv­ing

½ tsp sriracha

1 cup shred­ded cooked chicken

24 sesame rice crack­ers

½ cup shred­ded napa cab­bage

½ cup grated daikon radish

1 mini cu­cum­ber, thinly sliced

1 small red chile, thinly sliced

1 scal­lion, thinly sliced

¼ cup cilantro leaves

¼ cup low-fat sour cream

1. In a bowl, com­bine hoisin, lime juice, and sriracha. Toss with chicken to coat. Cover and mi­crowave 1 minute.

2. Ar­range rice crack­ers on a plate and top with chicken, cab­bage, radish, cu­cum­ber, chile, scal­lion, and cilantro. Serve with sour cream and lime wedges if de­sired.
