½ cup low-fat but­ter­milk 4 tsp fresh le­mon juice 2 small cloves gar­lic,

finely grated

2 tsp honey mus­tard

Kosher salt and pep­per 1½ cups shred­ded

cooked chicken

1 cup thinly sliced

red cab­bage

2 small car­rots,

coarsely grated

2 small rain­bow or Chiog­gia beets, scrubbed and very thinly sliced 1 av­o­cado, sliced

½ cup snow pea shoots

1. In a bowl, whisk to­gether but­ter­milk, le­mon juice, gar­lic, honey mus­tard, and 1/4 tsp pep­per.Trans­fer half of dress­ing to a small bowl and set aside. Add chicken to re­main­ing bowl of dress­ing and toss to coat.

2. Ar­range cab­bage, car­rots, beets, av­o­cado, and pea shoots on 2 large plates and sea­son with salt and pep­per.Top with chicken and driz­zle with re­main­ing dress­ing, toss­ing be­fore eat­ing.
