RAINBOW CHICKEN SLAW

½ cup low-fat buttermilk 4 tsp fresh lemon juice 2 small cloves garlic,
2 tsp honey mustard
Kosher salt and pepper 1½ cups shredded
1 cup thinly sliced
2 small carrots,
2 small rainbow or Chioggia beets, scrubbed and very thinly sliced 1 avocado, sliced
½ cup snow pea shoots
1. In a bowl, whisk together buttermilk, lemon juice, garlic, honey mustard, and 1/4 tsp pepper.Transfer half of dressing to a small bowl and set aside. Add chicken to remaining bowl of dressing and toss to coat.
2. Arrange cabbage, carrots, beets, avocado, and pea shoots on 2 large plates and season with salt and pepper.Top with chicken and drizzle with remaining dressing, tossing before eating.
