The later the sap comes out of the tree, the more ro­bust the syrup will be—syrup that is darker will have stronger maple fla­vor. But if a la­bel says “pan­cake syrup,” leave it on the shelf, as that means it’s made mainly from corn syrup, col­or­ings, fla­vor­ings, and preser­va­tives. Real maple syrup has only that one in­gre­di­ent.
