MUSHROOM AND ARUGULA SALAD PIZZA
IN A BOWL,TOSS: 6 oz cremini mushrooms, very thinly sliced
2 Tbsp olive oil 3 scallions,
thinly sliced ¼ tsp each salt
IN ANOTHER BOWL, TOSS:
4 cups baby arugula 2 scallions, thinly sliced 1 Tbsp olive oil 1 Tbsp fresh lemon juice ¼ tsp each salt and pepper Follow instructions on page 85 (top with only mushroom mixture before baking), then remove pizza from oven, top with arugula mixture, and sprinkle with ½ oz finely grated Parmesan. Serves 4.
