Pineap­ple Punch

START TO FIN­ISH: 20 MIN 3∕4 cup sugar • 1∕4 cup chopped fresh pineap­ple, plus 6 pineap­ple spears • 1∕4 cup fresh mint leaves, plus 6 sprigs • 1 bot­tle ( 750 milliliters) white wine • • 2 cups club soda 2 cups ice In saucepan, mix sugar, chopped pineap­ple, 1∕4 cup mint, 1 cup water, and pinch of salt over medium. Stir un­til sugar dis­solves, about 5 min­utes. Re­move from heat; let steep for 5 min­utes. Strain into pitcher. Stir in wine, club soda, and ice. Di­vide among 6 glasses. Gar­nish with pineap­ple spears and mint sprigs. Makes 6.
