En­dive & Es­ca­role Cae­sar with Frico

START TO FIN­ISH: 10 MIN 1∕4 cup may­on­naise 3 tbsp. olive oil 1 tbsp. an­chovy paste 1 tbsp. red wine vine­gar 1 tsp. Di­jon mus­tard 1 tsp. Worces­ter­shire sauce

1 clove gar­lic, grated 1 tsp. lemon zest 4 heads en­dive, chopped 1 head es­ca­role, coarsely torn 1∕2 cup fresh pars­ley leaves

1∕3 cup crum­bled frico ( Parme­san cheese crisps) In large bowl, whisk first 8 in­gre­di­ents. Add en­dive, es­ca­role, and pars­ley. Sea­son salad and toss. Top with crum­bled frico. Serves 4.
