Kettle Corn Crunch Brownies
• 11/2 sticks butter 13/4 cups • sugar 11/2 tsp. pure vanilla • • extract 3 large eggs 1 cup • cocoa powder 1/3 cup flour •
11/2 cups honey- roasted • peanuts 2 cups caramel popcorn u Preheat oven to 350°. Line 8-inch square pan with foil, leaving 2-inch overhang. Grease foil. In medium pan, melt butter over medium. Off heat, add sugar, vanilla, and 1/4 tsp. salt; whisk for 1 minute. Whisk in eggs, 1 at a time. Stir in cocoa and flour. Fold in peanuts. Pour into pan. Top with popcorn. Bake until tester comes out with moist crumbs, 40 to 45 minutes. Cool in pan. Using foil, lift brownie from pan. Cut into squares. Makes 16.
