Ket­tle Corn Crunch Brown­ies

• 11/2 sticks butter 13/4 cups • sugar 11/2 tsp. pure vanilla • • ex­tract 3 large eggs 1 cup • co­coa pow­der 1/3 cup flour •

11/2 cups honey- roasted • peanuts 2 cups caramel pop­corn u Pre­heat oven to 350°. Line 8-inch square pan with foil, leav­ing 2-inch over­hang. Grease foil. In medium pan, melt butter over medium. Off heat, add sugar, vanilla, and 1/4 tsp. salt; whisk for 1 minute. Whisk in eggs, 1 at a time. Stir in co­coa and flour. Fold in peanuts. Pour into pan. Top with pop­corn. Bake un­til tester comes out with moist crumbs, 40 to 45 min­utes. Cool in pan. Us­ing foil, lift brownie from pan. Cut into squares. Makes 16.
