1 Cit­rus Rice Pud­ding START TO FIN­ISH: 30 MIN • 1 cup jas­mine rice 3 cups half-and- half • •

6 tbsp. sugar 1∕2 tsp. ground cin­na­mon, • plus more for dust­ing 1 blood orange— zested, peeled, and cut into seg­ments

1 Meyer lemon or 1 small grape­fruit— zested, peeled, and cut into seg­ments • •

1 tsp. pure vanilla ex­tract fresh mint leaves, for gar­nish In medium saucepan, bring rice and 1 cup wa­ter to boil over high. Re­duce heat to medium-low; cover. Cook un­til wa­ter is ab­sorbed, about 8 min­utes. Add half-and-half, sugar, 1∕2 tsp. cin­na­mon, and cit­rus zests. Cook over medium-high, stir­ring of­ten, un­til rice is ten­der, 10 min­utes. Stir in vanilla. Di­vide among bowls. Top with cit­rus seg­ments, mint, and more cin­na­mon. Serves 6.
