37. Soften Butter for Baking

You are having a chocolate chip cookie emergency—you need a nice, warm batch, stat! If you don’t have time to let the butter get to room temperatur­e, take out your metal box grater. Partially unwrap the stick and rub the exposed part against the largest holes, carefully working your way down the stick. These butter shreds will fold easily into your cookie dough.
