AC­TIVE TIME 15 MIN­UTES TO­TAL TIME 40 MIN­UTES MAKES ABOUT 3 DOZEN

PRE­HEAT oven to 425°F. Line 2 bak­ing sheets with parch­ment pa­per. Roll puff pas­try to a 10-by-18-inch rec­tan­gle on a lightly floured sur­face. Mix car­away seed, cumin seed, cel­ery seed, and salt in a small bowl. Brush pas­try with beaten egg and sprin­kle with seed mix­ture.

US­ING a pizza cut­ter, cut pas­try cross­wise into -inchthick strips. Start­ing from the cen­ter, twist each strip a few times to cre­ate a long, twisted stick. Place twists 1 inch apart on pre­pared bak­ing sheets. Freeze un­til firm, about 15 min­utes.

BAKE twists, ro­tat­ing sheets from back to front and top to bot­tom, un­til golden brown, 7 to 10 min­utes. Let cool com­pletely be­fore serv­ing or pack­ag­ing.
