PREHEAT oven to 425°F. Line 2 baking sheets with parchment paper. Roll puff pastry to a 10-by-18-inch rectangle on a lightly floured surface. Mix caraway seed, cumin seed, celery seed, and salt in a small bowl. Brush pastry with beaten egg and sprinkle with seed mixture.
USING a pizza cutter, cut pastry crosswise into -inchthick strips. Starting from the center, twist each strip a few times to create a long, twisted stick. Place twists 1 inch apart on prepared baking sheets. Freeze until firm, about 15 minutes.
BAKE twists, rotating sheets from back to front and top to bottom, until golden brown, 7 to 10 minutes. Let cool completely before serving or packaging.
