SHRIMP TACOS Serves 1 Cilantro lime sour cream
½ cup sour cream 4 tablespoons fine chopped cilantro ½ teaspoon cumin Juice and zest from 2 limes Salt and pepper to taste
Combine all ingredients in a bowl and mix well. Set aside.
3 flour tortillas ½ pound shrimp ½ cup pico de gallo 1 cup shredded lettuce ½ avocado, diced ¼ cup julienned onions ½ tablespoon minced garlic Salt and pepper
Begin by placing a tablespoon of oil or butter in a sauté pan. Once hot, add the onions and minced garlic, cook until onions are translucent. Add in the shrimp and sauté 2 minutes on each side or until fully cooked. Warm the tortillas and fill evenly with lettuce, pico and avocado. Evenly distribute the shrimp and onions, finish with a drizzle of the cilantro lime sour cream.
