MUS­SELS AND SAUCE Serves 2

16 mus­sels 1 clove fresh gar­lic, shaved 2 ounces San Marzano toma­toes 2 ounces lob­ster stock 2 ounces shrimp stock 1 ta­ble­spoon lemon juice 2 ounces white wine 2 ta­ble­spoons olive oil 2 ounces but­ter 3 leaves basil, juli­enne 2 rus­tic cros­ti­nis

Heat a sauté pan hot and add the olive oil, gar­lic, mus­sels and toma­toes. Toss. After 15 sec­onds, add the wine, stock and lemon juice. Cook un­til the mus­sels are open/cooked.
