MUSSELS AND SAUCE Serves 2
16 mussels 1 clove fresh garlic, shaved 2 ounces San Marzano tomatoes 2 ounces lobster stock 2 ounces shrimp stock 1 tablespoon lemon juice 2 ounces white wine 2 tablespoons olive oil 2 ounces butter 3 leaves basil, julienne 2 rustic crostinis
Heat a sauté pan hot and add the olive oil, garlic, mussels and tomatoes. Toss. After 15 seconds, add the wine, stock and lemon juice. Cook until the mussels are open/cooked.
