Attaboy is back — and so is its beloved burger

The highly anticipate­d restaurant Cullum’s Attaboy has opened just off the St. Mary’s Strip with a limited breakfast and lunch menu. The only menu items available for now are Attaboy’s well-known hamburger, a smoked brisket breakfast sandwich, cheesecake and Perrier sparkling mineral water to wash it all down.

And, no, you can’t bring your own booze.

Owner Chris Cullum said he plans to expand the offerings in coming weeks with a focus on brunch with dishes such as quiche, eggs Benedict with caviar, French toast and escargot. The restaurant eventually will offer a full bar with classic craft cocktails, wine and beer.

That juicy burger started it all for Attaboy, which launched as a mobile burger purveyor housed in a distinctiv­e Airstream trailer along The Strip more than a decade ago. Cullum eventually took the trailer offline and shifted focus to his nearby popular fried chicken spot, Cullum’s

Attagirl, but burgers remain near and dear to him.

“The burger we’re doing right now is the same burger we were doing out of the Airstream,” Cullum said. “And we will still be the burger spot, but we’ve grown up some.”

Attaboy also will serve Cullum’s take on beloved dishes from bygone San Antonio restaurant­s. Some dishes will be inspired by options from The Landing Nightclub, where his late father, Jim Cullum, famously held court as San Antonio’s premier jazz cornetist for decades.

Other items will include a carp roe pâté called tamara from the former La Louisiane and potatobase­d doughnuts inspired by the once-prominent national chain Spudnut Shops.

“Basically we’re trying to do old San Antonio favorites from restaurant­s that no longer exist, those dishes you grew up loving before 1990,” Cullum said.

While technicall­y open, Cullum’s Attaboy, located in the former home of NOLA Brunch & Beignets and Golden Wat Noodle House, is still under constructi­on and not yet fully staffed. Cullum said he’ll gradually expand the menu and hours as work is completed and employees hired.

“We’re in our test phase,” he said. “We’re a super tiny little company coming out of COVID. As we can, we’ll start offering more.”
