Owners Brannon and Christie Soileau have _brought the best bagels to San Antonio by following old-world basics like hand-rolling bagels and following the steps to make sure there’s an excellent taste in every bagel. It’s not surprising that they’ve been voted the Best Bagels in San Antonio for this year’s Readers’ Choice Awards.

It all started four and a half years ago when Brannon was an instructor at the acclaimed Culinary Institute of America in New York. He was transferre­d to Texas, leaving him and his wife wondering what might be missing in their new hometown. They decided bagels were the answer.

“Ours were the first in Texas to do Montrealst­yle baking combined with East-coast style cooking,” Christie says proudly about their establishm­ent. “Brannon gets a challenge and wants to learn all about it. He went to a baker in Vermont, one in New York City, and he worked with them to make sure he got it right.”

Every day, they get to meet people and learn their stories, get to know where they’re from,

and all the cool things that make them who they are. It’s one of the passions behind Boss Bagels, especially as they made it through the pandemic.

“The business has been in a constant state of change since the beginning of the pandemic. We were good at communicat­ing that. I’m proud of the team that has helped to keep our business going over the past couple of years.”
