Beyond Meat Italian Skewers

1 package Beyond Meat Hot Italian

Sausage

1 red onion

1 red bell pepper Pineapple chunks

1 (8-ounce) package of baby bella

mushrooms

5 ounces barbecue sauce

4 wooden skewers, soaked in water

1⁄4 cup chopped cilantro Instructio­ns: Slice each sausage link into four 1 1⁄2-inch pieces. Chop the red onion, bell pepper and pineapple into 1-inch pieces.

Build each skewer starting with piece of sausage followed by red onion, bell pepper, pineapple and mushroom and repeat until skewer is full. Repeat for additional skewers.

Lightly oil the grates and heat an outdoor grill for a dual-zone cooking with the charcoal or gas burners stacked to one side. Grill on mediumhigh heat (in between the zones) for 4-5 minutes per side. Brush skewers with BBQ sauce about halfway through. Remove.

Garnish with fresh chopped cilantro (optional) and a side of barbecue sauce.
