L-cysteine is an amino acid used to extend the shelf life of commercial bread products. It is often listed in ingredient­s lists as “dough conditione­r,” and is most commonly synthesize­d from human hair, though duck feathers, cow horns and pig bristles are also used. Most of the source hair is gathered from the floors of hair salons in China.
