CHULA VISTA, CA — Lou Ellen (Mattox) Gipson passed away on December 7, 2022 in Chula Vista, CA. She was the daughter of Denzil and Virginia (Haskin) Mattox. She was born on February 10, 1944 in Reedley, CA, and attended schools in Reedley, graduating from Reedley High School in 1961.

She attended Reedley College for two years where she met her husband Ron. Ron and Lou Ellen were both art majors. Ron went on to finish college and become an art teacher and, several years later, Lou Ellen finished college, graduating from Alabama A & M with a Bachelor of Science. She taught kindergart­en at Chula Vista Christian School for 22 years. With her knowledge of Spanish she helped many of her young Spanish speaking students transition into English speaking schools. She was a truly gifted teacher who knew how to bring out the best in her students in a patient and kind manner. The kids loved her.

Lou Ellen was also very active in the Philanthro­pic Educationa­l Organizati­on (PEO), Chapter XU. She volunteere­d with the PEO since 1999. where she helped raise money for women’s scholarshi­ps. As part of the PEO, she enjoyed a close sisterhood, always sharing in fun times, sad times, and always looking out for each other.

Lou Ellen is survived by her adoring husband of 59 years, Ron. They moved to San Diego in 1966 while Ron completed his naval service during the Vietnam War, and they loved it so much they stayed. She is also survived by her two cherished sons Joshua (Catherine) and Justin (Cindy) as well as her beloved grandchild­ren Hunter, Parker, and Kennedy Gipson all of Chula Vista. She has one sister, Gail Phillips (Vincent) from Canton, OH.

Tuesday, December 20, 2022. Viewing: 12pm to 2pm. Funeral Service: 2pm to 3pm.
