Blackberry Crumble Ice Cream Sandwiches
Homemade, no-churn blackberry ice cream meets soft and chewy oatmeal cookies for these blackberry crumble inspired ice cream sandwiches. Easy, delicious, and the perfect sweet summer snack.

INGREDIENTS
For the no-churn ice cream: 1 (14-ounce) can sweetened condensed milk 1 teaspoon vanilla bean paste
2 cups whipping cream 2 1/2 cups blackberries, sliced in half
For the cookies: 1 2/3 cups all-purpose flour 3/4 teaspoon baking soda
1/4 teaspoon salt 1/2 teaspoon ground cinnamon 1 cup salted butter, softened
1 cup cane sugar 1/2 cup packed brown sugar
1 egg 2 teaspoons vanilla extract 1 1/2 cups quick-cooking oats
For the chocolate drizzle: 1/4 cup dark chocolate chips 1/4 cup white chocolate chips
2 teaspoons coconut oil
