Priority violations:

• Employee did not wash hands after coming back in from outside. Corrected.

• Employees did not wash hands between glove/task changes. Handwashin­g is required between glove changes or task changes. Corrected.

• Food in grill-side hot case is not at 135°F or above. White gravy is at 123°F. Sausage patties at 121°F. Items made fresh this morning. Adjust unit as needed.

• Food in prep table and the salad prep table are not being held at 41°F or below. Some items were prepared this morning. Some items destroyed as needed, other items not prepared today were destroyed. All time/ temperatur­e control for safety food must be destroyed at the end of service today. Service call has already been made.

• Not all food date marked as needed.

• Items in the children’s section of the menu cannot be offered under-cooked (hamburger, eggs). Items on children’s menu should be marked with an asterisk (*). Correct next menu change.

Non priority violations:

• Sanitizer used for wiping cloths is too strong. Exceeded 200 ppm. Should be 50-100 ppm.

• Some plastic food containers broken or cracked. Replace as needed.

• Food in the prep table is not holding at 41°F or below. Sausage link 42.5°F, cottage cheese 43°F. Adjust unit as needed.

Priority violations:

• Front handwashin­g sink has no cold water. Water turned off at the valve because the knob will not turn off water. Repeat violation.

Non priority violations:

• Using paint brushes to apply oil. Brush is rusty. Use only food grade equipment. Repeat violation. Throw away brush and use the food grade brush in the facility.

• Employee food is stored with establishm­ent food. Store employee food below establishm­ent food.

• Black refrigerat­or is not holding food at 41°F or below. Adjust as needed.

Non priority violations:

• No thermomete­rs in either refrigerat­or in dining area.

• Utensils and cookware stored on cloth towels which are on cardboard. Store on surfaces that are non-absorbent and easily cleanable.

• Exterior door and handles of walk-in cooler and walk-in freezer have an accumulati­on of food. Clean door and handles regularly.

• No lights in walk-in cooler or walk-in freezer. Replace/install bulbs.

• Permit posted is expired. Waiting for current permit from company’s main office.
