Getting into the back-to-school routine after a wild ’n’ crazy summer is something I always look forward to! This year my daughter starts high school, and with her busy schedule, here’s how I feed the fam wholesome, yummy meals fast.
We do weeknight menu themes. Think Meatless Mondays, Tortilla Tuesdays, Restaurant Copycat Wednesdays, etc. We all plan meals and switch up our nights every month.
Instead of a full dinner, sometimes we feast on finger foods. Cheese and crackers, veggies, hummus, apple wedges, Mini Zucchini Pizzas (page 98)—all good, with only a little assembly required!
Sit-down meals are a priority, no matter what’s on the table. The food is secondary to connecting through great conversation, laughter and smiles. Cheers to that!
