Honey Lemon Schnitzel

These pork cutlets are coated in a sweet sauce with honey, lemon juice and butter. They’re certainly good enough for company, but perfect for a quick weeknight meal, too. —Carole Fraser, North York, ON
3 Tbsp. all-purpose flour
³₄ tsp. salt
³₄ tsp. pepper 4 pork sirloin cutlets (4 oz. each)
2 Tbsp. butter ¹₄ cup lemon juice
¹₄ cup honey
1. Mix flour, salt and pepper; sprinkle over both sides of cutlets. In a large skillet, heat butter over medium heat. Add pork; cook until a thermometer reads 145¡, about 2-3 minutes per side. Remove from pan.
2. Add lemon juice and honey to skillet; cook and stir over medium heat until thickened, about 3 minutes. Add pork; heat through.
