Honey Lemon Schnitzel

These pork cut­lets are coated in a sweet sauce with honey, lemon juice and but­ter. They’re cer­tainly good enough for com­pany, but per­fect for a quick weeknight meal, too. —Ca­role Fraser, North York, ON

3 Tbsp. all-pur­pose flour

³₄ tsp. salt

³₄ tsp. pep­per 4 pork sir­loin cut­lets (4 oz. each)

2 Tbsp. but­ter ¹₄ cup lemon juice

¹₄ cup honey

1. Mix flour, salt and pep­per; sprin­kle over both sides of cut­lets. In a large skil­let, heat but­ter over medium heat. Add pork; cook un­til a ther­mome­ter reads 145¡, about 2-3 min­utes per side. Re­move from pan.

2. Add lemon juice and honey to skil­let; cook and stir over medium heat un­til thick­ened, about 3 min­utes. Add pork; heat through.
