Zippy Egg Salad

Egg salad is a refreshing, tasty change from lunch meat or peanut butter sandwiches for a quick and easy lunch. The touch of mustard and lemon juice gives it extra zip. —Annemarie Pietila, Farmington Hills, MI 3 Tbsp. mayonnaise
11/2 tsp. prepared mustard
1/₈ tsp. salt
1/₈ tsp. pepper
1/₈ tsp. lemon juice 3 hard-boiled large eggs,
1 Tbsp. minced green onion 2 slices bread
Diced tomato, optional Mix first five ingredients. Stir in eggs and green onion. Serve on bread. If desired, top with tomato.
