Easy Swedish Meatballs
TAKES: 30 min. • MAKES: 4 servings
1 small onion, chopped 1 large egg 1/4 cup seasoned bread crumbs 2 Tbsp. 2% milk 1/2 tsp. salt 1/₈ tsp. pepper 1 lb. ground beef SAUCE 1 can (10³/4 oz.) condensed cream of mushroom soup, undiluted
1/2 cup sour cream
1/4 cup 2% milk 1 Tbsp. dried parsley flakes
1/4 tsp. ground nutmeg, optional Hot cooked noodles
Minced fresh parsley, optional
1. In a large bowl, combine the first six ingredients. Add beef and mix well. Shape into 1-in. meatballs.
2. Place in a shallow microwave-safe dish. Cover and cook on high until no longer pink, 71/2 minutes; drain.
3. Combine soup, sour cream, milk, parsley and, if desired, nutmeg; pour over meatballs. Cover and cook on high for 5-6 minutes or until heated through. Serve with noodles and, if desired, parsley.
