Basil-Tomato Grilled Cheese

Keep the taste of summer going with this easy Italian-style grilled cheese sandwich. It tastes comforting and fresh all in one bite, and is super fast to make on busy days. —Sylvia Schmitt, Sun City, AZ
8 slices Italian bread (³ ₄ in. thick) 8 slices part-skim mozzarella cheese
2 large plum tomatoes, sliced 2 Tbsp. minced fresh basil
2 tsp. balsamic vinegar
Salt and pepper to taste
¹₄ cup olive oil
3 Tbsp. grated Parmesan cheese ¹₄ tsp. garlic powder
1. On four slices of bread, layer the mozzarella cheese and tomatoes; sprinkle with the basil, vinegar, salt and pepper. Top with remaining slices of bread.
2. In a small bowl, combine the oil, Parmesan cheese and garlic powder; brush over the outsides of each sandwich.
3. In a small skillet over medium heat, toast sandwiches until golden brown on both sides and cheese is melted.
