Basil-Tomato Grilled Cheese

Keep the taste of sum­mer go­ing with this easy Ital­ian-style grilled cheese sand­wich. It tastes com­fort­ing and fresh all in one bite, and is super fast to make on busy days. —Sylvia Sch­mitt, Sun City, AZ

8 slices Ital­ian bread (³ ₄ in. thick) 8 slices part-skim moz­zarella cheese

2 large plum toma­toes, sliced 2 Tbsp. minced fresh basil

2 tsp. bal­samic vine­gar

Salt and pep­per to taste

¹₄ cup olive oil

3 Tbsp. grated Parme­san cheese ¹₄ tsp. gar­lic pow­der

1. On four slices of bread, layer the moz­zarella cheese and toma­toes; sprin­kle with the basil, vine­gar, salt and pep­per. Top with re­main­ing slices of bread.

2. In a small bowl, com­bine the oil, Parme­san cheese and gar­lic pow­der; brush over the out­sides of each sand­wich.

3. In a small skil­let over medium heat, toast sand­wiches un­til golden brown on both sides and cheese is melted.
