Ore­gon reader Sarah Gil­bert dishes on how she gets her spicy packed mac on the ta­ble in a flash.

Q: What in­spired you to load your mac with all this good­ness? A: One evening my boyfriend and I had a crav­ing for spicy mac and cheese, so I tweaked my orig­i­nal recipe from 12 years ago, switch­ing out ched­dar cheese for spicy cheese and adding chicken, jalapenos and ba­con to the mix. Be­fore we knew it, we had our new fa­vorite mac and cheese dish.

What are your best tricks for get­ting din­ner on the ta­ble quickly?

I have two slow cook­ers at home, so some­times I’ll use both of them at the same time—one for the main and one for the side. Also, I have a won­der­ful boyfriend who acts as my sous chef to help make prep go more smoothly. Find Sarah’s Spicy Chicken Ba­con Mac recipe on page 75.
