Oregon reader Sarah Gilbert dishes on how she gets her spicy packed mac on the table in a flash.
Q: What inspired you to load your mac with all this goodness? A: One evening my boyfriend and I had a craving for spicy mac and cheese, so I tweaked my original recipe from 12 years ago, switching out cheddar cheese for spicy cheese and adding chicken, jalapenos and bacon to the mix. Before we knew it, we had our new favorite mac and cheese dish.
What are your best tricks for getting dinner on the table quickly?
I have two slow cookers at home, so sometimes I’ll use both of them at the same time—one for the main and one for the side. Also, I have a wonderful boyfriend who acts as my sous chef to help make prep go more smoothly. Find Sarah’s Spicy Chicken Bacon Mac recipe on page 75.
