Ingredients 6 large bananas ½ cup dark rum 2 tablespoons brown sugar 2 tablespoons maple syrup 2 tablespoons lemon or lime juice 1 tablespoon butter Sprinkle of cinnamon Method Rub a little butter on the bottom of a mediumsized glass baking dish. Peel and slice the bananas lengthwise and place them in the dish. Sprinkle the brown sugar over the bananas. In a bowl, mix the rum, maple syrup and lemon/ lime juice and pour over the bananas. Evenly space the remaining butter around the bananas and sprinkle with cinnamon.
Bake for about 20 minutes or until the bananas are a little tanned on top. If you really want to be wicked, add another tablespoon of rum before you dish up portions. Serve with cream.
