Recipe of the Week Spicy Vegetables & Chicken Soup

(Serves 6-8)

Ingredients

2 32-ounce cans or boxes of chicken broth

1 cup wild rice (your favorite brand)

1 cup quinoa

1 14½-ounce can cannellini beans, drained and rinsed 2 cups chicken breast, cooked and chopped 2 tablespoons extra virgin olive oil

1 tablespoon each: turmeric, red pepper flakes,

ginger, oregano, fresh minced garlic clove (peeled), black pepper, kosher or pink Himalayan salt, Balsamic vinegar

2 stalks celery, tops and bottoms trimmed and chopped

2 large carrots, tops and bottoms trimmed, chopped 1½ cups fresh green cabbage, chopped

1½ cups fresh red cabbage, chopped

1 red or white onion, peeled, chopped

1 bunch scallions, tops and bottoms trimmed away, chopped

2 cups fresh kale (chopped or leaf)

4 cups water

Directions: To a large soup pot, add the chicken broth and all spices. Next, add all chopped vegetables and four cups of water. Then, add rice, quinoa and cannellini beans. Bring contents of pot to a boil and boil for 15 minutes. Simmer for one hour, or until vegetables are tender and rice and quinoa are cooked. Be sure to have at least 1 and ½ inch of liquid at the top of the soup at all times. You may add more water, if needed while the soup simmers. (Angie cautions not to wait until the end to add the water just before serving). To prepare fewer servings, this recipe may be cut in half. Angie says “Happy cooking!”
