Executive chef and general manager Fritz Cassel is offering playful selections for high season at this 3-year-old spirited locale with awood-fired stone hearth.

Cassel says football star PeytonMann­ing’s commercial forNationw­ide Insurance inspired his chicken Parmesan ($22). Cuban sandwiches spurred his Cuban pizza with ham, roast pork, pickles and Dijon sauce ($14).

“My beef cheek ravioli is inspired by the deliciousn­ess of beef cheeks,” Cassel says of his creation with asiago, ricotta, artichoke, mushroom, tomato and shallot demi-glace withWagyu ($28). “They have tons of collagen, which makes an amazing broth. The richness is unparallel­ed.”

Other standouts include pimentoric­otta squash blossoms ($12) and hogfish with creamy polenta, spinach, tomato salsa and saffron beurre blanc ($26).

With his wild mushroom Parmesan gnocchi ($12), Cassel says, “My idea is to create an intense mushroom experience — porcini powder in the gnocchi, fresh roasted mushrooms and porcini stock to deglaze the pan.”

Save roomfor Valrhona chocolate cannoli, apple cherry streusel or banana cream brûlée (all $7).

The best-selling seasonal cocktail ($12) is theMoscowM­ule-inspired Stevie Ray, which blends Texas ingredient­s. Cardamom, garammasal­a and egg white enliven the Peter Tosh with spiced rum and pineapple.
