The renowned Argentine grilling extraordin­aire, FrancisMal­lmann, is helming his only kitchen outside of South America at this new hotel. The luxurious Faena, formerly the 1948 SaxonyHote­l, heralds the Faena Arts District in the Mid-Beach area.

The poolside, red-accented, alfresco setting echoes the outdoor spirit of Argentine asado— beef and sausages grilled over an open flame. Mallmann designed cooking utensils and thewood oven to fuse his various fired techniques, such as hanging fish and meat to slowcook or cooking in ashes.

Bold flavors boost signatures, such as prime filet empanadas ($14), octopus a la plancha ($23) wholeMedit­erranean branzino ($48), prime rib eye with chimichurr­i ($42) and 48-ounce tomahawk steak ($195).

Signatures include the Smoke& Spark cocktail with reposado requila, jalapeño and lime ($22) and chocolate profiterol­es with rich mascarpone served tableside ($14).

The interior, with chandelier­s that flicker when lightning strikes the Argentine pampas, opens onto the terrace with a retractabl­e awning. A gilded skeleton of awooly mammoth glitters nearby in encased glass.

Lunch and dinner are served daily, and jazz and Latin bands rotate during the week.
