Crepes make lighter lasagna
Q: Lynora’s inWest Palm Beach has a lasagna Bolognese that is unlike any other I’ve ever tasted. It is as light and tasty as I’ve ever experienced. It’s a diversion fromthe norm and seems to use crepes instead of a heavier pasta. The Bolognese is marvelous. Iwould so love to have that recipe! Thanks in advance.— Susan Kolben, Boca Raton
A: Several things set this lighter rendition of lasagna fromLynora’s (207 Clematis St., West Palm Beach; 561-899-3117; lynoras.com) apart fromother recipes: crepes, an absence of ricotta cheese, a bechamel sauce.
The pasticcio Bolognese is one of the restaurant’s most popular dishes.
As a young boy, co-owner Angelo Abbenante fondly recalls spending summers with his grandmother, Lynora. The restau- rant serves his grandmother’s classic recipes in addition to modern Italian interpretations.
“Shewould make pasticcio, substituting thin crepes for pasta, resulting in a lighter dish but without compromising flavor,” he said.
Q: My 7-year-old granddaughter loves the tomato caprese salad at Outback. I have tried a number of times to duplicate it, with no luck. I tried contacting Outback and they toldmethey do not give out their recipes. Do you think there is a chance you can get it? Thank you so much for your effort.— Susan Rogers, Sunrise
A: Outback Steakhouse (multiple locations; outback.com) is very tightlipped when it comes to its Aussie recipe box. So I did a little digging around. Interestingly enough, I found a detailed description on a website called Quizlet, the same sitemy daughter uses to create study guides and flashcards for school.
After obtaining that info, coupled with an inquisitive phone call, I think I have all the elements to write a recipe for you and your granddaughter. Since there are so few ingredients in this dish, try to find the highest quality for best results. I simplified the recipe by calling for prepared marinated mozzarella. If you prefer, make a garlicky, olive oil and herb marinade and allow the cheese to marinate overnight. And if you’re really crunched for time, balsamic glaze is available in the vinegar aisle at most grocers.
