Grilled romaine Caesar salad

Q: My husband and I enjoy dining at Brimstone Woodfire Grill in Pembroke Pines. I love the Grilled Caesar salad. It is very unique and delicious. I have searched the internet and although I found several recipes for Grilled Caesar salad, based on the ingredient­s used, it is not the same or similar to Brimstone’s. I was wondering if you could help me get the recipe? — Carmen Wagner, Cooper City

A: The time is ripe for keeping kitchens cool, heading outside and firing up the grill. And this recipe should be at the top of your menu prep list. The Grilled Caesar salad served at Brimstone Woodfire Grill (14575 SW Fifth St., Pembroke Pines, 954-430-2333, brimstonew­oodfiregri­ll.com) is a fresh twist on a classic recipe that can be adjusted to suit your needs. Aside from grilling the romaine, all the remaining components can be made ahead – croutons, dressing, tomato oil – making it perfect for summer entertaini­ng. And if you’re really crunched for time, storebough­t dressing and croutons will do in a pinch.

The Grilled Caesar salad recipe was inspired by Brimstone’s restaurant director of operations, Andy Fox. The recipe’s first version was developed at Brimstone’s sister location, Beach House Pompano. When Brimstone Pembroke head chef Julio Martinez tasted the salad, he was fascinated with the flavor profile and presentati­on.

“In this version we split the heart of romaine in half to keep it mostly intact, this helps with keeping the crispiness of the lettuce. Then it is grilled on our white oak wood fire grill to give it that smoky flavor,” he says. “There is a great combinatio­n of flavors on the plate, between the crunchines­s and salty flavor from the Parmigiano Reggiano cheese, our house made Caesar dressing, the fresh baked Parmesan croutons and a drizzle of sun-dried tomato oil.”
