Big Bear Brewing Co.’s veggie burger

This recipe has been adapted and reduced significan­tly for home cooks. Burgers can be individual­ly wrapped in plastic wrap and frozen. Thaw in refrigerat­or before cooking.

3 ounces canned whole beets, drain and reserve ¼ cup liquid

5 cups cooked brown rice, cooled

1¼ cups canned black beans, drain and reserve ¼ cup liquid

3 teaspoons Gulden’s Spicy Brown Mustard

1 tablespoon chile powder

1 ⁄4 cup chopped parsley

1 small onion, diced

1 cup Quaker Oat Bran cereal, more or less, based on consistenc­y

Salt and black pepper, to taste

Olive oil, for cooking

Sweet soy glaze, for serving (See recipe)

Sliced Jack cheese, for serving

Multigrain roll, for serving

Thousand Island dressing, for serving

Sliced tomato, onion, pickle and lettuce, for serving

1. Using a food processor fitted with a blade attachment, process beets until finely chopped. Add remaining burger ingredient­s, except the oats, include reserved liquids. Season with salt and pepper, to taste. Pulse until mixed and still slightly chunky, scraping down the sides. Beans should be about a quarter of their original size. Gradually add oats, pulsing until mixture holds its shape well enough to form a patty. Be careful not to make the mixture too mushy. Refrigerat­e mixture several hours or overnight.

2. Form the mixture into 7-ounce patties. Using a skillet over medium-high heat, add just enough oil to lightly coat. Cook veggie burgers until golden brown, about 4 minutes per side.

3. Brush each burger with about a tablespoon of sweet soy glaze. Top with Jack cheese, to melt. Place burger on bun, spread with Thousand Island dressing, top with tomato, onion, pickle and lettuce.

Makes about 10 burgers
