Barbecue fires up in Palm Beach County

Tropical Smokehouse isn’t the only ’ cue joint to smoke up Palm Beach County in recent months. Although Smoke BBQ flamed out in Boca Raton earlier this month, a new crop of barbecue joints are vying to fill your smokymeats craving.

First a legendary roadside stand, now a restaurant group, Troy’s Barbecue

is in rapid expansion mode under owner Anthony Barber, stepson to founder Troy Davis. After 22 years in Boynton Beach, Troy’s expanded to Boca Raton

in 2019 ( 1198 N. Dixie Highway) and added its second outpost in late November in southern West Palm. Because the barbecue is Texas- style, brisket and

ribs are Troy’s bread- andbutter, but it’s hard to go wrong with their madefrom- scratch pork, chicken and cornbread.

After 10 years of running a weekend barbecue stand out of his family church lot, Bill Caesar and his wife, Pauline, opened their first brick- and- mortar rib shack in August one block south of the bustle of Atlantic Avenue. Here, Bill cooks slabs of spare ribs low- andslow every morning at 5 a. m., slathering them in mild jerk and a North Carolina- style mustard- based sauce. Pauline, meanwhile, handles just about everything else: mac ’ n’ cheese, baked beans, collard greens, coleslaw, potato salad, and peas and rice.
