Lyndsey Stiepleman’s Shining starfruit pie

For the crust

1 cup all-purpose flour, plus more for rolling

1⁄2 teaspoon salt 6 tablespoon­s unsalted butter, chilled and thinly sliced 4 tablespoon­s cold water

1. Using a medium bowl, whisk together flour and salt. Add butter and cut into flour with two knives until mixture resembles small pebbles. Add cold water and mix until dough comes together and form into a ball and flatten into a disc. Chill dough in refrigerat­or. 2. On a clean, floured surface, roll dough into a 10-inch circle. Place dough in an 8-inch pie tin and trim excess. Crimp edges by pressing down with a fork. Save excess dough and cut into stars using a star shaped cookie cutter. Refrigerat­e crust and stars.

For the starfruit filling

1⁄2 tablespoon unsalted butter

6 medium to large starfruits, deseeded and diced

1 cup light brown sugar

2 tablespoon­s all-purpose flour

1 teaspoon cinnamon

¼ teaspoon nutmeg

1⁄8 teaspoon salt

1⁄8 teaspoon orange extract

1⁄8 teaspoon vanilla extract Whipped cream for serving, optional (See recipe) 1. Heat oven to 350 degrees F. Using a large sauté pan over medium high, melt butter. Add starfruit and sauté until softened. Drain excess liquid from cooked starfruit. Return pan to heat, add light brown sugar, flour, cinnamon, nutmeg, salt, orange and vanilla extracts. Sauté until golden brown, about 3 minutes. 2. Strain starfruit of all but 1/2 cup of cinnamon syrup. Reserve remaining syrup. Pour cooled fruit into crust and place pie dough stars on top. 3. Bake 20 minutes, remove pie from oven and brush remaining syrup over crust. Bake for an additional 10 minutes. Allow to cool 15-20 minutes before serving. Serve with whipped cream, if desired.

Whipped cream (optional)

Chill metal mixing bowl in freezer 10-15 minutes before whipping cream. This will help to ensure that the whip cream holds it shape.

1 pint heavy whipping cream

1⁄4 cup confection­s’ sugar

1 teaspoon vanilla extract Using an electric handheld or stand mixer fitted with a whisk attachment on medium high speed, whip cream, sugar and vanilla until soft peaks form. Chill until serving.
