Pistache celebrates 15 years with reunion in the kitchen
Pistache — the French bistro in downtown West Palm Beach — is getting the band back together.
To commemorate the restaurant’s 15th anniversary, chef de cuisine Mike Burgio has invited the chefs who helped establish the culinary foundation for Pistache’s legacy to join him in presenting a one-nightonly collaboration for special a la carte menu where each chef creates dishes that pays homage to their respective years in the Pistache kitchen.
THE CHEFS Mike Burgio,
who began helming the cuisine at Pistache back in 2021.
Isaac Cerny, who was at Pistache from 2011 to 2021 and is now executive chef at Mariner Sands Country Club in Stuart.
Julien Gremaud, who was at Pistache from 2008 to 2011 and is now executive chef/ owner of Avocado Grill in West Palm Beach, Avocado Cantina in Palm Beach Gardens and the upcoming Pink Steak, also in West Palm Beach.
THE MENUS AND PRICES
Chef Julien Gremaud: Appetizer: Yellowfin Tuna Carpaccio with Seared Foie Gras, Hazelnuts, Pomme Allumette and Sauce Asiatique for $29 Entrée: Lobster Risotto with Fennel Confit, Tarragon and Fava Beans for $52.
Chef Isaac Cerny: Appetizer: Blue Crab Mezzelune with Sweet Corn, Bell Pepper, Roasted Poblano and Lemon Gremolata for $29. Entrée: Lamb Provençal with Herb Crusted & Char-Grilled Lamb Loin, Braised Coco Beans, Confit Garlic, Marinated Tomato, Watercress and Mint Pesto for $54.
Chef Mike Burgio: Appetizer: Crispy Pork Belly with Smoked Grits Caramelized Fennel, Vanilla Poached Peach, Sauce Agrodolce for $24. Entrée: Cocoa Braised Short Rib with Chestnut Puree, Salsify, Summer Truffle for $60.
The regular dinner menu will also be available and DJ Adam Lipson will be spinning.
