Wasabi Monte Cristo

A spicy wasabi-mayo spread and sweet mango give the classic Monte Cristo sandwich a super tasty twist. —Susan Riley, Allen, TX

2 Tbsp. reduced-fat mayonnaise

1/2 to 1 tsp. prepared wasabi 1 medium mango, peeled and chopped, or ²/3 cup frozen mango chunks, thawed

2 tsp. light brown sugar

4 slices multigrain bread

2 oz. thinly sliced deli turkey

2 oz. thinly sliced smoked deli ham 2 oz. sliced baby Swiss cheese

Mango chutney, optional

2 large egg whites, beaten

11/2 tsp. confection­ers’ sugar

Fresh mint leaves, optional

1. Combine mayonnaise and wasabi; set aside. In another bowl, combine mango and brown sugar; puree with an immersion blender or in batches in a regular blender. Set aside. 2. Assemble the sandwiches by spreading two slices of bread with mayonnaise mixture. Layer slices evenly with turkey, ham and cheese. If desired, spread remaining bread with chutney. Top the meat and cheese with remaining bread. Dip sandwiches in egg whites.

3. In a large nonstick skillet coated with cooking spray, brown the sandwiches over medium-high heat about 2-3 minutes on each side. Before serving, dust sandwiches with confection­ers’ sugar; halve sandwiches. Serve with mango mixture for dipping and, if desired, mint leaves.

Pasta Pizza

My family often requests this meatless main dish, a tempting cross between pizza and spaghetti. Make it yours by swapping in your favorite pizza toppings. —Andrea Quick, Columbus, OH

Prep: 25 min. • Bake: 10 min. Makes: 4 servings 8 oz. uncooked angel hair pasta 4 tsp. olive oil, divided

2 cups sliced fresh mushrooms 1/2 cup chopped green pepper

1/4 cup chopped onion

1 can (15 oz.) pizza sauce

1/4 cup sliced ripe olives

1/2 cup shredded part-skim

mozzarella cheese

1/4 tsp. Italian seasoning

1. Preheat oven to 400°. Cook pasta according to package directions; drain.

2. In a large ovenproof skillet, heat 1 tsp. oil over medium heat. Add mushrooms, green pepper and onion; saute until tender. Remove and keep warm. Increase heat to medium-high. In same skillet, heat remaining oil. Spread pasta evenly in skillet to form a crust. Cook until lightly browned, 5-7 minutes.

3. Turn crust onto a large plate. Reduce heat to medium; slide crust back into skillet. Top with pizza sauce, sauteed vegetables and olives; sprinkle with cheese and Italian seasoning. Bake until cheese is melted, 10-12 minutes.
