What inspired you to create this dish as a galette? I’ve made a few dessert galettes and loved them. I was thinking about savory options and decided that if fruit pies could turn into galettes with tasty results, a potpie would probably work well, too!

What comes to mind when you think of modern comfort food? To me, modern comfort food is taking my longtime favorite foods and combining them with some new favorite ingredient­s or styles of cooking. For example, I didn’t try galettes until a few years ago, but I’ve been eating potpie my whole life.

Using Swiss chard in the filling is a nice twist. Do you ever change up the filling with different ingredient­s? It’s pretty flexible in terms of what vegetables you can add. Sometimes I substitute spinach or kale for the chard if that’s what I have on hand, or I’ll throw in something like parsnips instead of the carrots.
