Home­made Gua­camole

Noth­ing is bet­ter than fresh gua­camole when you’re eat­ing some­thing spicy. It’s easy to whip to­gether in a matter of min­utes, and it quickly tames any­thing that’s too hot. —Joan Hall­ford, North Richland Hills, TX Takes: 10 min. Makes: 2 cups •

3 medium ripe av­o­ca­dos, peeled and cubed

1 gar­lic clove, minced

¹₄ to ¹ ₂ tsp. salt

2 medium toma­toes, seeded

and chopped, op­tional

1 small onion, finely chopped ¹₄ cup may­on­naise, op­tional

1 to 2 Tbsp. lime juice

1 Tbsp. minced fresh cilantro Mash av­o­ca­dos with gar­lic and salt.

Stir in re­main­ing in­gre­di­ents.

Test Kitchen tip:

To keep guac green, place it in an air­tight con­tainer, smooth the sur­face with a spoon and pour a halfinch of wa­ter over the top. Seal and store; pour off the wa­ter just be­fore serv­ing.

Stash ex­tra guac to slather on sand­wiches or tuck into tacos.
