CINNAMON TOASTED ALMONDS

In a large bowl, beat 2 large egg whites until frothy; beat in 6 tsp. vanilla extract. Add 4 cups unblanched almonds; stir gently to coat. Combine 1/3 cup sugar,

1/3 cup packed brown sugar, 1 tsp. salt and 1/2 tsp. ground cinnamon; add to nut mixture and stir gently to coat. Spread evenly in 2 greased 15x10x1-in. baking pans. Bake at 300° until almonds are crisp, 25-30 minutes, stirring once. Cool. Store in an airtight container. Makes 4 cups.
