Ingredient­s: 1 each lemon, grapefruit and orange, shredded Sugar to taste Water

Directions: Wash and shred fruits, weigh and add three times the measure of water to a pot with shreds and sugar. Bring slowly to a boil. Remove from heat, cover and allow to stand overnight. Next morning, boil until peelings are soft, cool and measure, add one pound sugar for every pint of mixture, then return to boil until tiny bubbles cover entire surface. Skim as bubbles rise, pour into sterilized glasses.
