MARINATED TOMATO & CUCUMBER SALAD

Ingredient­s:

2 medium tomatoes, cut into wedges

2 medium cucumbers, thinly sliced

1 small onion, diced and separated into rings

1/4 cup cider vinegar

1/4 cup vegetable oil

3 Tbsp. mayonnaise

2 Tbsp. sugar

1/2 tsp. garlic powder

Directions: Combine tomato wedges, cucumber slices and onion rings in a large bowl, set aside. Combine vinegar and remaining ingredient­s, beat using a wire whisk until mixture is smooth. Pour dressing over tomato mixture, tossing gently. Cover and chill at least two hours, stirring occasional­ly. Serve with slotted spoon, makes six servings.
