Looking for some easy last-minute Halloween recipes? Treat your guests to deviled eyeball eggs, witches brew and a Frankenstein jackfruit head.
Tonight is the big night, but are you ready? ● Don’t be too scared. I whipped up these quick and easy Halloween recipes using mostly ingredients I already had on hand. You can find the funky tropical fruits at Asian markets and natural or fine food stores. ● From deviled eggs to mocktails to show-stopping buffet decor you can eat the next day, you’ll get to surprise your friends and family at your Halloween fete.
Witches Brew Mocktail (or Cocktail)
This sweet and tart drink will please kids and adults alike. Made with 100 percent fruit juice and no added sugar, this punch pairs nicely with vodka, tequila or gin, for adults craving a cocktail.
Servings: 4 (8-ounces each)
Prep time: 15 minutes
3 cups pomegranate juice
1 cup ruby red grapefruit juice
1 cup freshly squeezed blood orange juice (juice of 6-8 oranges)
Rambutan fruit (or use canned lychee fruit), peeled
Finger limes, cut in half diagonally
Pour all of the juices into a pitcher. Chill for a few hours.
Serve over ice or to serve “up” with alcohol, shake with ice in a cocktail shaker.
Garnish with rambutans and finger limes, adding the rambutans to the glass after the ice. For a strained cocktail, place the rambutans directly into the glass.
Per serving (without alcohol): 115 calories, 27 g total carbohydrate (0 fat, cholesterol, fiber or protein).
