Ten-Minute Gourmet: Homemade Hummus
Chickpea spread savory topping for salad, sandwich.
Our creamy chickpea spread will amp up the flavor of everything from cucumbers to noodles to sandwiches. Whip up our hummus recipe and try it in some of our favorite savory dishes. with 2 thin slices red onion, separated; 2 tablespoons crumbled feta cheese; and pinch pepper. Drizzle with 1 teaspoon olive oil. Toast until crisp around edges. Top with basil leaves. Serves 1.
Gingery Chicken: Arrange 4 small boneless, skinless chicken breasts on a foil-lined baking sheet; sprinkle with ½ teaspoon salt and spread with ¾ cup cardamom-ginger hummus (listed below). Bake in a 375degree oven for 40 minutes or until cooked (165 degrees F). Garnish with chopped parsley. Serve with cooked rice pilaf. Serves 4.
Loaded Veggie‘Wich: Spread ⅓ cup roastedpepper and mint hummus (listed below) on two slices lightly toasted whole-grain bread. Top 1 piece bread with two slices sharp Cheddar cheese, then sliced cucumbers and tomato, shredded carrots and sprouts. Top with second piece of bread. Serves 1.
Soba Salad: Whisk together ½ cup spicy cilantro hummus (listed below), ¼ cup seasoned rice vinegar, 2 tablespoons canola oil, 1 tablespoon soy sauce and ¼ teaspoon salt. Toss with 8 ounces soba noodles, cooked; 1 cup frozen shelled edamame, thawed; 1 cup shredded red cabbage; and ½ cup roasted cashews, chopped. Top with sesame seeds. Serves 4.
