Ten-Minute Gourmet: Homemade Hummus
Chickpea spread perfect on savory salad, sandwich.
Our creamy chickpea spread will amp up the flavor of everything from cucumbers to noodles to sandwiches. Whip up our hummus recipe and try it in some of our favorite savory dishes.
In food processor or blender, pulse 4 cloves garlic, 6 tablespoons fresh lemon juice and ¾ teaspoon each salt and ground cumin until chopped. Add ¾ cup tahini and ⅓ cup water; pulse until smooth. Drain cooked chickpeas and add to tahini mixture; process until smooth, stopping and stirring occasionally. Store in airtight container in refrigerator up to 2 weeks. Makes 3 ½ cups. cardamom-ginger hummus (listed below). Bake in a 375degree oven for 40 minutes or until cooked (165 degrees F). Garnish with chopped parsley. Serve with cooked rice pilaf. Serves 4.
Loaded Veggie‘Wich: Spread ⅓ cup roastedpepper and mint hummus (listed below) on two slices lightly toasted whole-grain bread. Top 1 piece bread with two slices sharp Cheddar cheese, then sliced cucumbers and tomato, shredded carrots and sprouts. Top with second piece of bread. Serves 1.
Soba Salad: Whisk together ½ cup spicy cilantro hummus (listed below), ¼ cup seasoned rice vinegar, 2 tablespoons canola oil, 1 tablespoon soy sauce and ¼ teaspoon salt. Toss with 8 ounces soba noodles, cooked; 1 cup frozen shelled edamame, thawed; 1 cup shredded red cabbage; and ½ cup roasted cashews, chopped. Top with sesame seeds. Serves 4.
“Love Today” ceramic coffee mugs, sold exclusively at Target Stores nationwide and online at www.target.com between December 2015 and January 2016 for about $8.
The mugs were mislabeled as microwave-safe. If microwaved, the metal- lic print on the mug can spark, posing a fire hazard.
Consumers should immediately stop using the recalled mugs and return them to Target for a full refund.
