Vietnamese eatery’s food permit yanked
A Gwinnett County Vietnamese restaurant had its food permit suspended for “12 flagrant violations and two consecutive unsatisfactory routine scores.” Viet Kitchen in Norcross scored 21/U on March 10. Previous scores were 100/A on March 17, 2020, and 64/U on March 11, 2020.
According to the report, the person in charge could not demonstrate knowledge of food safety. That person was unable to state proper cooking or cooling parameters and could not demonstrate active managerial control of employee health and hygiene. Other violations:
■ Open containers of thawing seafood and poultry were stored in one container with commingling from various raw animal proteins.
■ There was a moldy container of raw crawfish stored in the reach-in cooler.
■ Multiple containers of previously cooked food were stored in the reach-in cooler uncovered.
■ Cooked crab, chicken quarters, shrimp and rice were hotheld at temperatures below 135 degrees.
■ Multiple prepared foods held in the facility for longer than 24 hours did not have any date marking.
■ Several containers of chemicals without labeling were in the kitchen and serving stations.
■ A container of raw pork was thawing in a sink in stagnant water. The surface temperature exceeded 41 degrees.
■ Open containers of spices were stored on the floor in the kitchen and dry storage area.
■ An employee was preparing food while wearing an insufficient hair restraint.
■ There were live roaches in kitchen.
Most restaurants with failed scores are reinspected within 10 days.
